Brewed with Freeman - I accidentally flushed my airlock while sanitizing, so the first night was spent with a cork as a dust-cover before I could get a new one. Hopefully no infection!

Still no fermenting bubbles... I don't know if that's the dry yeast or the 24 hours spent without an airlock... I'm going to give it another day and then get replacement wet yeast from the wine and hop shop.

I took a hydrometer reading today and the ale is down to 1.010, which means it has been fermenting. There must not have been a perfect seal with the airlock. I'll bottle this soon so it doesn't get exposed to the air after I opened it to check, but probably not tonight.

I skipped racking and went to bottling - 1/2 into the pig and then into a few 20's and 12's. To mix the priming sugar I had to stir the fermenter, which meant that a lot of trub that was on the bottom and hadn't been racked off got stirred up. I didn't stir what went into the pig, so hopefully that should be good at least. This batch was definitely not my best showing - let's see how it tastes...

Mash Style: Extract
Brew Style: Belgian Specialty Ale

Ingredients for 5 gallons (19 L):

  • 1 oz Perle Hops
  • English Ale Yeast
  • 6 lb Caravienne Malt, came in the kit - weight estimated!
  • 1 oz Fuggle Hops

Instructions:

This was a kit straight from Homebrew Heaven that I got as a Christmas gift. I can't figure out exactly which style of Belgian it is, the recommended OG of 1.50 and darker color suggest that it might be a Dubbel but I only got 1.40 out of it.

This brew uses a variety of adjunct grains to give it a true belgian flavor, but I'm a little skeptical of the pre-hopped dry extract.

Take the grains and steep them as the temperature rises. I didn't do any partial mashing to this - just used them to add a little color and body. I added the malt extract and candi sugar, then boiled for an hour. After 45 minutes, add the Irish Moss to clarify the beer. Boil for 13 more minutes, add the aroma hops and boil for 2 minutes before taking the pot off heat.

Cool to 80 F, transfer to primary fermenter and add the yeast. Rack to a secondary fermenter after a few days.

OG: 1.04
FG: 1.01
Percent Alcohol: 4.07%
